Opening of a new upscale Indian restaurant in Hillsborough

HILLSBOROUGH, NJ — After working in the pharmaceutical industry for the past 15 years, Hillsborough native Parthiv Buch is changing his career direction to pursue his passion for food.

Buch opens Mishta, an upscale Indian restaurant in his hometown at 220 Triangle Road.

“Cooking has always been my passion, since I was a child,” says Buch.

Buch grew up watching his mother and grandmother cook.

“Inspired by their passion and traditional recipes, he now brings those same raw, authentic flavors to New Jersey. Each dish is a tribute to his roots and love of home-cooked meals,” says mishta.dine.

His wife encouraged Buch to follow his passion and he went to India to receive personal professional training from a chef. After returning home, he began hosting private events around the world, including in the US, England and London.

Now he is taking the next step and opening his first restaurant in his hometown.

“It’s a great city,” Buch said. “I think we have good diversity. And I just thought there was a need for an upscale Indian restaurant.”

Buch found that if his family wanted to go to Indian food and enjoy a nice dinner, they would have to drive to either New York City or Princeton.

“I think to myself: who wants to drive three or four hours to New York when you can eat something in your hometown, right? Something nice where you can have a nice culinary experience,” Buch said.

Buch has found the location in New Center Village Square, where he hopes to open Mishta sometime in September.

What sets Mishta apart is the farm-to-table concept. Buch has partnered with some of the local farms in Hillsborough.

“We’re going to use fresh produce to prepare our food. I also work with some of the local meat farms whose meat is, you know, organic and grass-fed,” says Buch. “The focus is to make sure we’re eating clean so we feel clean and comfortable.”

Everything is made in-house and his spices are flown in from India.
